We always do pizza on the grill. Ends up looking like a taco.
Takes less than 3 minutes to cook one.
Put the temperature on low.
Flour tortilla shells
Pizza Sauce
Cheese
Any toppings you like on pizza
Spray both sides of the shell with non-sticking spray.
I always put foil on the grill....easier to flip.
Put the tortilla on the grill and flip it continuously for about 20 seconds.
The shell will start to get a little crisp.
Now dump all your toppings on it. Sauce first, of course.
Use a spatula to rotate the 'pizza' so it doesn't burn.
After a minute or two, fold the pizza in half so it looks like a taco.
Then eat Tastes great.
Beef on a stick...easy to fix and quick to make.
Top steaks like rib-eye (that is what I use) or New York strip, cut into narrow strips.
Marinade over night in a double large plastic sealable bag.
Marinade:
olive oil
sesame oil
soy sauce
minced onion
minced garlic
cider vinegar
sesame seeds
salt and pepper
(can add hot sauce/ pepper flakes if you want)
string on wooden skewers, put the sticks with meat in a large bowl with rest of marinade.
Fire up grill and grill for a few minutes...do not overcook...
We're doing breakfast quesadillas, some chorizo mixed with smoked pork butt, with peppers, onions, refried beans, guacamole, taters, queso and cilantro. Build your own quesadilla and grill to your preference.
Here is a great dipping sauce.
1/2 cup sour cream
1/2 cup ranch dressing
2-3 chipotle peppers in adobe sauce (chopped into small pieces)
Let the flavors meld for 12 or more hours.
I do like to serve with spicy baked beans...my version of an Ameri-Mex breakfast.

Not doing a lot special this week. But Friday after T'Giving will be epic!
