We would be better off if we started our better player. That's easy to say because pretty much every coach at every level trys to start their best players. Why would they all do that if it didn't matter? One reason you start the guy you plan on giving more snaps to is its easier to get him more plays off during the game if he starts the game. AJ had all of his snaps compressed into a smaller amount of time than Hesse did because he hardly played the first 2 series of the game.
