Meat is the only thing that has a required cooking time so as long as you like the vegetables and fruit cooked for the same time as the meat you’re good to go. Actually I’d rather have my veggies on the slightly “less done” side so that they’re not mush.My wife would be in heaven if she saw that, she loves kabobs.
Random story, we took a grilling class a couple years ago and they were strongly against throwing kabobs on the grill. They said that almost everything in a kabob needs to cook at different lengths and temperatures. For example, usually veggies take longer to grill than meat. So they suggested cooking everything on its own and then putting them on the kabobs after they're all done.
For the record we didn't listen to the guy because kabobs are awesome just like you have them, but that's what the "grill expert" said and I guess it makes sense.

In other words you won’t get sick from eating veggies or fruit even if they’re raw. If he was talking about mixing different kinds of meat, chicken and pork have similar cooking times and as long as they get done all the way you should be fine. Beef can safely be eaten rare (which is how I like it) so when I mix beef and pork/chicken I just go until they get done. Haven’t had a bad experience yet.![]()
