Forecast for opener 8/31

Back to the weather. They just updated forecast to low 70s during the day and much lesser chances for rain, but it will be cloudy. So outlook has improved a lot for tailgating. Iowa game of course.

You may have done elsewhere, but you have the recipe for the sauce? Would like to try it.
Sorry, totally skipped by this somehow...

1 cup Mexican crema (preferably) or sour cream

1/2 cup Hellman's Mayo

Teaspoon of Old Bay seasoning

1/2 teaspoon of black pepper

A clove of minced garlic

Juice from half a lime. Don't be shy with it.

Adobo sauce--this you have to do to taste, I like it spicy so I put a pretty good amount in. It's just the sauce from a can of chipotle peppers for like $1.29. If you really like heat you can mince a chipotle pepper and add it.

About a couple tablespoons of Cotija cheese (Feta will also work, but it's tangier so add a little bit at a time to taste).

I posted this one last year, but for you guys who love smoked stuff... it's a little somethin' different.

Smoked Sweet Potato Salad

Par boil your sweet potatoes (not mushy), cool and slice. Slice em before boiling if you prefer, but DO NOT fully cook em. Fire up your smoker.

Dry off the slices and toss with a little olive oil and spice rub. Lightly smoke em for about 15 minutes...you just want a kiss.

While they're smoking, mix the dressing. mayo, chopped cilantro, whole grain mustard, adobo sauce, salt, pepper and a couple of chopped green onions.

When the potatoes are done and cooled a bit, coarse chop em into chunks and mix with the dressing. Finishing off with...what else ....cooked bacon crumbles. YUM.

Here's what you need.

Smoky Rub:
2 tablespoons paprika
1 tablespoon kosher salt
1 tablespoon light brown sugar
1 teaspoon freshly ground black pepper
1 teaspoon chipotle chile powder
1/2 teaspoon dry mustard

2 teaspoons olive oil

Sweet Potatoes:
2 pounds sweet potatoes, peeled and sliced 1/4-inch thick and into half-moons

Dressing
2 teaspoons adobo sauce from chipotle packed in adobo
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 scallions, white and green parts, thinly sliced
3/4 cup mayonnaise
1/4 cup fresh cilantro leaves
2 tablespoons whole-grain mustard
4 slices bacon
