Bacon and breakfast

Its the weekend and I like to womp up a big breakfast. I think its a man's domain. I don't mind cooking but the thing is I eat it up so quickly

I'll eat eggs frequently but not always with bacon/sausage/pancakes/biscuits/hashbrowns etc.

I've found that Mom and Dad's way wansn't necessarily the best. One thing that Dad did do that I appreciate is he broiled his bacon...let the grease drop down into the pan. I like that idea of letting the grease drain away. But I bake / roast my bacon at 300-375.

Mom/Dad never made buscuits except store bought roll. Scratch are awesome and easy to make.. I like mine crumbly.

Eggs, sunny side up usually put the lid on to let the yellow cover and look pink. Scrambled is good too. Omlets are a challenge

Pancackes from scratch are good. Thick batter allow to fluff up.

I'll include a method of making hashbrowns. I just never take time to do it. Kent Rollins

Cut up fried potatoes are great too.

I like to use butter.
 
Never been a big pancake guy and certainly NEVER order at a restaurant. Air fryer bacon works pretty well to but it's a pain to clean the air fryer baskets afterwards. Baking on a wire rack with the grease dripping to a pan seems to be the money play here.
 
Agree baking bacon on a wire rack is the way to go. I do mine at 425 though. And turn on Convection if you have it.

Hashbrows in the air fryer are the best way to crisp them up.

Sunny side up or over easy eggs are my go to. Scrambled if I'm cooking for the masses. Omelet if it's just for me.
 
Electric skillet. 3 jumbo eggs fried in butter. Sausage links or thick cut Amana bacon, also fried. Canadian rye bread, a specialty. I make a mean French toast, whip up egg, milk, vanilla with maple syrup only. If you criticize me, I will report you to my grand daughters. Fair warning.
 
My mom was born and raised poor in Mississippi. I thus was raised on southern food and southern breakfast particularly.

Some things are pretty much ubiquitous like eggs, bacon, hash browns, etc. But my mom's biscuits and gravy are unequaled by anything I've ever had in the Midwest or otherwise, restaurant or homemade. No matter how good you think your or your mother's biscuits and gravy are, unless you or said mother was raised in the deep south they are cheap, minor league imitations. Sorry.

Also...fun fact...

I've tasted oatmeal one time in my life, not until my mid 20s. It made me want to harf. The taste and texture are just incorrigible to me...nothing could make it palatable.

I was raised on grits. I still eat them on weekends to this day.

Gotta agree on the sausage and biscuits- my mother was born and raised in New Orleans, so I think I qualify for this competition. I keep to her recipe. And, yes, there is a bottle of Louisiana hot sauce nearby to apply the final touch. Eat grits, maybe not every weekend, but at least once a month- and it is the kind you cook, not zap in a microwave.

Gotta disagree on oatmeal. My 3rd year at Iowa in my one room flat on Governor Street I lived on oatmeal and saltines. My big treat was when I could afford butter for the saltines...........

No grits. Oatmeal good. Arkansas friends cooked me up biscuits and gravy with wild hog sausage from Texas. They brought back 60 hogs with a rancher’s blessing. I do love B&G! Sounds like mom was an artist…

When I can't tell the difference between oatmeal and what my dog's vomit looks like, I'm not eating the oatmeal.

I’m a GenXer. So, I still have the “if it doesn’t have meat, it is not a meal” sorta mentality. I can occasionally rock the awesome breakfasts you guys are describing, but because of my age/cholesterol I can’t do that shit all the time anymore.

F*ck, I was listening to Rogan the other day, and I guess Canola oil is bad for you, and I should be taking peptides.

No clue…old man rant over.
 
nothing wrong with a healthy bagel, bran muffin and fruit for breakfast. I love avacodo too.

i'm old enough to remember that OJ came in a can frozen. I'd be the one who had to "make the orange juice" stir it forever until it melted.

Grapejuice is awesome - in moderation and Apple Juice is great too.

I’m a GenXer. So, I still have the “if it doesn’t have meat, it is not a meal” sorta mentality. I can occasionally rock the awesome breakfasts you guys are describing, but because of my age/cholesterol I can’t do that shit all the time anymore.

My favorite keto meal that I do once most weekends is a 3 egg omelette with 3 diced up breakfast sausage patties, shredded cheddar cheese, chives, and a whole avocado sliced up on top. Valentina extra hot on top (it's not that hot).

I usually wait till like 11AM to eat it and it's my one meal of the day if I do. About 1,200 calories, only 3-4 net carbs. Super filling so if I wait till midday like I mentioned I don't need supper. GF likes it as well so I normally make two at the same time and then we don't have to mess with supper. A little less common for us in the summer because summer weekends I'm usually smoking ribs or chicken and we eat that while we watch baseball in the garage.

Btw, if you guys like hot sauce the Valentina extra hot is great. It's very low on my spice scale (I like spicy stuff) but the flavor is great. Not hot for the sake of being hot.

Yea, I try to stay away from all oils pretty much anymore. Remember when they advertised that Canola oil was the healthy oil compared to veg oil. Ha.

I'll do some olive oil but have to be careful sec to the hot point with it.

Long ago I asked a Hisppanic guy I work with what his go to hot sauce was and he says in Mexico at least, Valentina was the ubiquitous one. After that I started noticing how it was in the kitchen of pretty much every Mexican restaurant I went, usually the big ass 1 liter glass bottle. Been hooked since. About a year ago I found the "hotter" verzion I pictured earlier and it's what I keep on the shelf 24/7 now. It's basically just a spicier version of the regular one and you can get it in any Walmart.
